Making honey almonds and seed crisps is a must in my house during the festive season. In Malaysia and Singapore, almond Florentine with seeds is one of the famous Chinese New Year cookies and Eid’s cookies.
As it is often commercially targeted as a healthy cookie, plus being a seasonal treat, this cookie can be on the pricey side. After knowing how simple it is to make Almond Florentine cookies in an easier and healthier way, I never buy it again.
This almond and seeds crunch is like a mixed nuts and seeds bar but in a bite-size. If you try to incorporate more seeds and almonds into your diet, this is the best treat, and it is not only easy to make but delicious!
The problem is it’s too good to resist. If you are trying to reduce your sugar intake, maybe put the jar away and stick with a small portion per day.
Almond Florentine cookies without flour
Most almond florentine recipes call for premix florentine flour or Bienneta powder mix. I find the premix flour to be highly processed, which degrades the nutrients in the nuts and seeds.
Florentine flour often contains milk powder, processed fat or vegetable fat that has been processed into powdered form, refined sugar that comes in many names, and not to mention the emulsifier and stabilizer. Because of my auto-immune condition, I try to avoid highly processed ingredients in my recipe.

Ingredients
1 cup (90g) Sliced almond
- Seeds
1/2 cup of (70g) Pumpkin seeds
3 tbsp of Sunflower seeds
2 tbsp Sesame seeds
2 tbsp of Chia seeds
3 tbsp of Honey
1 big pinch of salt
Directions
- Preheat the oven to 160C/340F with top and bottom heat on.
- Combine all the ingredients in a bowl and gently stir with a spatula until all the ingredients are fully incorporated. Avoid breaking the almond when stirring.
- Line a baking tray with a baking sheet.
- Scoop a tablespoon of a mixture into a scone or cookie cutter to make it into a perfectly round shape. Repeat until finished. Scroll above for the photo.
- Bring the tray into the preheated oven, place it on the middle rack, and bake for 12 minutes or until golden.
- Once the timer is done (or the cookies are nicely golden), bring the tray out and leave it to cool at room temperature before you enjoy it. It will get crispy once it cools down.
